Tapas, or the small plates trend continues to be hot, hot, hot!!!
Bite-sized is best, so this season, look for skewers filled with fresh peppers, locally grown vegetables, sharp cheeses, and wood-fired meats.
More and more often, creative chefs are fusing two regions into one delicious dish, such as Philippine with South Asian cuisine.
Mouthwatering menu items like ahi poke to tuna tartare continue to be favorites. While, for those who crave the classics, small bites of old time favs like meatloaf topped with whipped mashed potatoes, mini Caprese salads, and even pint-sized portions of mac and cheese are being served up to rave reviews.
Then there are the classics, but with a twist. Chef Casey Bryant at Antler’s Restaurant, Breezy Point Resort is preparing flavorful filet mignon marinated in lime and jalapeno peppers with a hint of cumin, and serving it on a grilled garlic and herb flour tortilla, with a cabbage and cilantro slaw, feta cheese, and a chipotle aioli.
No doubt about it, this season’s small plates are big on flavor!
