Gaylord Rockies to Redo Restaurants and Add Meeting Space

Three of the convention property's existing eateries will be renovated, and a new restaurant and the Mountain View Pavilion event venue will be added.

Just five years after opening, the 1,501-room Gaylord Rockies Resort & Convention Center in Aurora, Colo., is set to bring new concepts to three of its existing restaurants, launch a new dining experience, remodel its Grand Lodge and increase its function space with a new event pavilion.

Scheduled for completion in 2024, the enhancements are phase two of a multiyear plan by owners Ryman Hospitality Properties, who aim to provide a more spacious and elegant environment for both group and leisure customers. A redesign of the outdoor lawn spaces and the addition of dining terraces for the Old Hickory Steakhouse and the Mountain Pass Sports Bar were completed in April.

“You rarely see this amount of growth in a resort property,” said Suzy Hart, general manager of the resort. “We just completed a major exterior enhancement in April and now we’re ready to give guests the interior experience of their dreams.”

The Mountain View Pavilion

This new event venue will offer 12,118 square feet of indoor meeting and prefunction space, more than 14,000 square feet of outdoor terraces and patios, and 15,000 square feet of turfed lawn areas. Interior plans include floor-to-ceiling windows, banquet space, a skylight, a refined indoor fireplace and west-facing mountain views. The Pavilion will welcome events in 2024.

Embers Lodge Bar

Opening next spring, this bar in the Grand Lodge will feature a 360-degree wraparound bar and 248-person seating area. On the menu will be handcrafted cocktails and beers from local distilleries, as well as a curated wine list. Embers will replace the current bar, Pinyons, and the Après Ski Village space.

The Fortunate Prospector

Also debuting next spring in the Grand Lodge, the 134-seat English pub will have a mascot — Earl, a suave bighorn sheep sporting a top hat and monocle. The menu's inspiration comes from traditional English roots, featuring unique British cocktails and traditional fare along with a 12-draft beer tower.

Garden & Grain

Replacing the Monte Jade later in 2024, Garden & Grain will be the first restaurant within the Gaylord Hotels brand that focuses on healthful dining. Using sustainable practices, the eatery will highlight gluten-free, vegetarian, keto, low-carb and vegan options, providing savory yet holistic cuisine while celebrating local farmers.

Copper Table

During the renovations, the Vista Montagne restaurant will become the Copper Table, serving Colorado cuisine for breakfast, lunch and dinner. The menu will include local trout and hearty flavors in the form of rotisserie free-run chicken, cast-iron elk, bison rib eye and more. From the bar, guests will be able to choose from handcrafted cocktails, hyper local craft beer and a wide selection of wines. Copper Table will open in late 2024 and will seat 328 people, an increase of 117 from its previous capacity.
