Potawatomi Hotel & Casino’s hotel restaurant, Locavore, will be headed by veteran culinarian Van Luu, who has been named chef.
Luu will run all kitchen operations at Locavore and will also oversee hotel room service at the restaurant, which is set to open on Monday, Aug. 18, with the rest of the hotel.
Luu’s culinary career has spanned 12 years, and he has served as a chef at Charlie Trotter’s Restaurant in Chicago, Restaurant Charlie in Las Vegas, Milwaukee’s Lake Park Bistro and Bacchas, and the Prodigal Gastropub.
While preparing food at Charlie Trotter’s Restaurant in Chicago, Luu trained under the restaurant’s well-known chef, Charlie Trotter, himself.
“We are thrilled to welcome a talent like Chef Luu to Locavore,” said Don Sally, food and beverage director. “Chef Luu’s exceptional culinary experience and fresh approach to cooking is a perfect match for our restaurant and guests.”
Luu has experience cooking a variety of cultural cuisines but describes his style as “mainly French with a minimalist Asian approach,” according to Potawatomi. He also favors quality, local products and produce.
“I’m looking forward to providing the best possible dining experience for guests,” Luu said. “For me, there is no better reward than creating a thoughtful menu and watching guests react positively to the lively flavors and high-quality ingredients that blend together for a perfect meal.”
Locavore will be located on the first floor of the new hotel and will be open daily for breakfast, lunch and dinner. The restaurant has a casual dining atmosphere, according to Potawatomi, with “globally-inspired dishes” and “local and sustainable foods.”
The restaurant will be managed by Yazmin Figueroa-Guzman, who brings more than a decade of management experience.
